January is such a long, cold, dark – and this year, – wet month! I really don’t believe in wishing my life away, but I for one will certainly not be sorry to see the back of it, and look forward to welcoming February and all the hopes and newness of the approaching Spring. However, still a week or so to go so just time for January’s macaron of the month. Saturday is Burn’s Night so what would be more appropriate, especially given the weather, than a ” wee dram” in a macaron! Combining white chocolate, Scottish honey and whisky from our favourite Scottish island – Islay – results in the most delicious and warming ganache and works perfectly in a pale whisky coloured macaron. No need to tell you what to drink with our Burn’s Night macaron! Slainte!
