With only days to go before the end of this month, I realise that I have yet to share with you the macaron flavour of the month. Once again taking inspiration from the garden, I have chosen Lavender and Violet macarons, a delicate but distinctive flavour, and the prettiest of pale, mauve colours. The macaron shells are made with lavender sugar in place of plain castor sugar and decorated with crystallised violets and dried lavender. A deliciously light and creamy filling of soft cheese whipped with lavender sugar makes these macarons an extra special, late summer treat. Enjoy in a deck chair in the garden with a cup of Darjeeling tea!
