Coconut macarons with dark chocolate and lime ganache

Inspired by the macaron/macaroon debate and a recipe for lime and chocolate macaroons on the back of a packet of desiccated coconut and, mindful of the fact that not everyone likes, or can safely eat, almonds, I’ve made a coconut macaron and filled it with an exotic ganache of dark chocolate and lime! I replaced the ground almonds of my basic macaron recipe with desiccated coconut but kept everything else the same – including the all important macaronage! The result is an airy, sweet, crispy macaron biscuit – slightly more rustic looking than the traditional almond macarons,  – which is beautifully complimented by the bitter-sharp, tangy ganache. A very  sophisticated variation of those sticky, coconut tea time treats of my childhood.
